Pineapple Avocado Elixir

Summer is over and it is time for pumpkin this, spice that, but when I want to feel something refreshing going down my throat that does not smell like cinnamon and spice...here is what I drink!

It has the electrolytes we need to replenish after a workout, good for your heart fats from avocado, and enough sweetness from pineapple to quench anyones sweet tooth. I make a point to add cilantro because of its detoxifying effects, but there are those who are not big fans of cilantro so you can also omit it. You will also get a full serving of greens with spinach. I sometimes use kale when I don't have spinach on hand and it doesn't change the flavor dramatically.

You can also make variations of this by adding protein powder for that extra protein kick. With this smoothy I like using a plant based protein like hemp. You can also throw in a few almonds or giving it a kick with superfood greens, I use these from Amazing Grass. Just a tiny scoop and you have a serving of amazing superfood! 

 

Ingredients

  • 1 1/2 cup coconut water
  • 1 celery stalk
  • 1/2 cucumber
  • 1/2 cup frozen pineapple chunks
  • 1/2 hass avocado
  • 1 cup baby spinach
  • handful cilantro
  • ice

Preparation

  1. Place all ingredients in high speed blender adding more or less ice to your liking.
  2. Blend well. If smoothly is too thick you may also add more liquid.
  3. Drink while still cold. Enjoy
